Three Bean Chili

RECIPE NOTES

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes 4 portions

 

INGREDIENTS
  • 1 tbsp olive oil

  • ½ cup onions, diced

  • ½ cup red bell pepper, diced

  • 1 jalapeño pepper, seeds and ribs removed, diced 

  • ½ tsp chili powder 

  • tsp black pepper

  • tsp sea salt

  • 1 cup tomato, fresh diced

  • 1-15 oz can each of pinto beans, red kidney beans, black beans. All drained and rinsed

  • ½ cup cheddar or jack cheese, shredded

 

DIRECTIONS
  1. Heat oil in a medium size pan on medium heat.

  2. Sauté the onion and peppers until onions turn translucent.

  3. Add the chili powder, black pepper, salt, and diced tomatoes.

  4. Add the beans and simmer for ten minutes.

  5. Serve with rice or in a tortilla.

  6. Top with cheese.
