Spicy Vegetables and Quinoa

  • 1 large onion, sliced

  • 1 clove garlic, crushed

  • 2 tbsp curry powder or 4 tbsp curry paste

  • 1 ml coconut milk

  • ¾ cup quinoa, rinsed

  • 750 g frozen mixed vegetables

  1. Simmer the onions and garlic for one minute in a large sauce pan.

  2. Add curry powder or curry paste. Cook for one minute.

  3. Splash a little water in the pan, approximately ¼ cup.

  4. Add frozen vegetables and quinoa. Cook for one minute while stirring.

  5. Add coconut milk. Cook for approximately 10 minutes or until quinoa is fully cooked.

  6. Taste seasoning. Add salt and pepper if needed. Serve with favorite flatbread.
