Smothered Pork Chop

Preparation Time: 20 minutes
Cooking Time: 40 minutes
Makes 4 portions


  • 2 tbsp olive oil

  • 4 pork chops bone in, 1” thick, seasoned on both sides with salt and pepper

  • 1 tbsp all purpose flour

  • 1 tbsp butter

  • 2 large onions, peeled and sliced

  • 2 cups chicken broth


  1. Heat oil in a skillet large enough to fit the pork chops.

  2. Dredge pork chops in flour and then add to oil and brown thoroughly on both sides.

  3. Remove pork chops and add butter to the pan. Once the butter melts, add sliced onions.

  4. Cook onions over medium heat until they are thoroughly browned, stirring as needed. This will take about 20 minutes.

  5. Add chicken broth. Bring to a boil and then reduce to a simmer.

  6. Add pork chops to this mixture and cook for an additional 10 minutes.
