Shrimp Scampi

Makes 4 portions
INGREDIENTS

1 pound shrimp, 31-35 peeled, tail off

2 tbsp chopped garlic

2 tbsp olive oil

¼ cup diced white onions
-
½ cup white wine
-
juice from 1 lemon
-
2 tbsp chopped flat leaf parsley

6 oz spinach
-
1 pound cooked linguine
DIRECTIONS

In a medium sauce pot, heat the oil on medium heat.

Add the garlic and onions and cook till tender.

Add the shrimp and cook for 3 minutes.

Add the white wine and lemon juice and cook for 2 minutes.

Add the spinach and parsley and cook till spinach begins to wilt.

Add the pasta and toss together and serve.
