RoMa Grilled Chicken

RECIPE NOTES

Preparation Time: 15 minutes + 3 hours or overnight
Cooking Time: 12-15 minutes
Makes 6 portions

 

INGREDIENTS
  • 6 boneless chicken breasts or boneless chicken thighs (can be mixed)

  • ¼ cup fresh parsley, finely chopped

  • ¼ cup fresh basil, finely chopped

  • ¼ cup fresh thyme, finely chopped

  • ¼ cup fresh oregano, finely chopped

  • ¼ cup scallions, finely chopped

  • 3 garlic cloves, finely chopped

  • 1 teaspoon red pepper flakes

  • 1 cup blended oil (½ cup olive oil and ½ cup canola)

  • Pinch of salt and black pepper

 

DIRECTIONS
  1. Mix all herbs and seasonings with the blended oil until well combined.

  2. Add this mixture to the chicken and mix well.

  3. Cover and allow to marinate in refrigerator for a minimum of 3 hours or overnight.

  4. Preheat grill.

  5. Grill chicken on both sides until it reaches an internal temperature of 165°F.
