Recipe Notes
Makes 8 - 4 ounce servings
Ingredients
- 1 pound Butternut Squash, cut into 2" cubes
- 12 oz Chocolate Chips, vegan
- 1 teaspoon Maple Syrup
- 1 teaspoon Vanilla Extract
- 1 teaspoon Ground Cinnamon
- 1/2 teaspoon Ground Nutmeg
- 1 teaspoon Ground Ginger
- 1/2 cup Coconut Cream
- 2 Tablespoons Coconut Oil
Directions
- Melt chocolate chips over a double boiler, stirring occasionally.
- While chocolate is melting, steam butternut squash until you can easily mash it.
- Add maple syrup to mashed butternut squash, mix well.
- Remove chocolate from heat when melted; fold in coconut oil, coconut cream, cinnamon, nutmeg, and ginger.
- Combine squash and chocolate mixture in a food processor. Puree for 4 minutes or until completely smooth.
- Chill and serve.
