Butternut Squash Chocolate Mousse

Makes 8 - 4 ounce servings

Ingredients

  • 1 pound Butternut Squash, cut into 2" cubes
  • 12 oz Chocolate Chips, vegan
  • 1 teaspoon Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Ground Nutmeg
  • 1 teaspoon Ground Ginger
  • 1/2 cup Coconut Cream
  • 2 Tablespoons Coconut Oil

Directions

  1. Melt chocolate chips over a double boiler, stirring occasionally.
  2. While chocolate is melting, steam butternut squash until you can easily mash it.  
  3. Add maple syrup to mashed butternut squash, mix well.
  4. Remove chocolate from heat when melted; fold in coconut oil, coconut cream, cinnamon, nutmeg, and ginger.
  5. Combine squash and chocolate mixture in a food processor.  Puree for 4 minutes or until completely smooth.
  6. Chill and serve.
