Quinoa and Jackfruit Sweet Pepper Pilaf

Makes 4 portions


  • 1 tbsp olive oil

  • ¼ cup onion, diced

  • ¼ cup red bell pepper, diced

  • 1 cup quinoa*

  • 1 garlic clove, minced

  • ¼ tsp sea salt

  • 2 cups vegetable broth

  • 1 cup jackfruit, green in brine, drained diced



*Check package of quinoa to see if it has been washed. If not, wash the quinoa, drain well, and allow to dry before proceeding.

  1. Heat olive oil in a medium size skillet using moderate heat. 

  2. Sauté the onions and peppers until onions are transparent.

  3. Add the quinoa and stir it frequently while it toasts for one minute.

  4. Add the minced garlic and continue toasting the quinoa. When kernels begin to pop add the diced jackfruit.

  5. Sauté briefly.

  6. Add salt.

  7. Add the vegetable broth and simmer until liquid is absorbed and quinoa is tender and fluffy, approximately 15 minutes.
