Penne with Fresh Tomato and Basil

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes 4-6 portions


  • ¼ cup olive oil

  • 1 tbsp garlic, minced

  • 5 cups fresh tomato, diced

  • 1 lb penne pasta

  • ¾ cup fresh basil, chopped

  • ½ cup parmigiano cheese, grated


  1. Cook pasta in a pot of salted water. When pasta is slightly under cooked, drain and rinse lightly, enough to stop the cooking process, and hold until needed.

  2. In the same pot add oil and allow it to become hot.

  3. Add garlic and sauté until it becomes fragrant.

  4. Add tomatoes and sauté just until they start to release the juices. 

  5. Reduce heat to low and fold pasta and basil to this mixture.

  6. Top with parmigiano and serve.
