Cherry Oat Crisp

RECIPE NOTES

Preparation Time: 15 minutes
Baking Time: Approx. 45 minutes
Makes 4-6 portions

 

INGREDIENTS for filling
  • 4 cups fresh or frozen tart cherries (can sub for other fruits as well)

  • 1¼ cup granulated sugar

  • 4 tbsp corn starch

  • 1½ tbsp lemon juice

  • 2 tbsp butter

INGREDIENTS for Topping
  • 1 stick of butter (cold and cut into small cubes)

  • 1 cup all-purpose flour

  • ½ cup regular or quick cook oats

  • ½ tsp cinnamon

  • 1 tsp vanilla extract

 

DIRECTIONS for filling
  1. Combine all ingredients together in a microwave safe bowl.

  2. Heat on high in 2 minute intervals (stirring after each interval) until mixture starts to thicken.

  3. Pour into an oven-safe 9” dish (any shape).

  4. Sprinkle topping on the filling.

  5. Bake at 350°F for approx. 20 minutes or until topping is golden brown in color.

  6. Let cool for 20 minutes before eating.

DIRECTIONS for Topping
  1. Combine all ingredients together in an electric mixer and mix until mixture begins to “crumble” into pea-sized pieces.
