Banana Bread

Baking Time: Approx. 1 hour
Makes 4-6 portions

 

ingredients
  • ¾ cup butter

  • 2¼ cup granulated sugar

  • 3 large whole eggs

  • 2 tsp vanilla extract

  • 1½ cups buttermilk

  • 1 tbsp lemon juice

  • 1¾ cup ripe bananas, mashed

  • ¾ cup canola oil

  • 3 cups all-purpose flour

  • 1½ tsp baking soda

  • ¼ tsp salt

  • 2 cups chopped walnuts (optional)

 

Directions
  1. Cream together the sugar and butter using an electric mixer.

  2. Add eggs and vanilla extract. Mix well.

  3. Add buttermilk, lemon juice, bananas and canola oil. Mix well.

  4. Add the sifted dry ingredients (flour, baking soda, and salt). Mix just until incorporated. Do not over mix.

  5. Fold in the walnuts (if desired).

  6. Pour batter into a greased 9”x4” loaf pan.

  7. Bake at 275°F until done and toothpick inserted into the center comes out clean.   

  8. Baking time varies depending on your oven, approximately 45-60 minutes.
